Amritsari chola bnane ke liye sabse pehle ham chola ko 4-5 hours ke liye pani me dalkar rakh denge. Ab 4-5 hours baad cooker me chola ko chaan kar dal denge. Pani v utna he dalenge jitna chola hai. Next isme cinnamon, black elaichi, chai Patti ko ek kapra me dalkar close karke daal denge, laung, salt , bay leaf sab daal kar cooker ko close karenge . 5-6 whistle tak high flame par rakhenge uske baad 2-3 whistle tak low flame kar denge. Ab ek taraf alag – alag onion ka paste , tomato ka paste, garlic ka paste ready karke rakhenge. Fir ek pan me special masala ready karenge ( Special masala ka recipe ke liye niche read kare). Uske liye sare seeds ko roast kare aur fir grind karke powder tayar Karen. Ek pan garam kare aur usme oil dale. Fir garlic paste dale aur stir kare. Ab usme onion paste dale , ajwain, hing dalkar fry kare medium flame par. Jab onion golden brown hone lage to tomato pury dale aur fry kare. Salt dale. Ab mix karke fry kare. 10 minute bad isme 3 table spoon special masala dale aur achese fry kare. Masala ko tab tak fry kare jab tak wo oil chor de. Ab ek cup chola nikal kar masala me dale aur mash karde taki gravy thick bane. Ab mix ho jaye to saare chola ko usme dalkar mix kare aur 5 minute tak fry kare taki sara masala achese chola me mix ho jaye. Ab jo cooker me pani hai usko v pan me daal de aur achese mix kare. Usko thick hone tak rakhe. Jaise he lage thick ho gaya hai to dusre ek pan me 2 table spoon ghee dale , ajwain aur degi mirch powder dale aur usi waqt chola me daal de aur fir mix kare. Ye ready hai hamara amritsari chola. Ab chopped coriander leaves upar se sprinkle kare aur salad me onion, green chilli , lemon rakhe. Sath me kulcha ya bhatura sath serve karde.   • Chai Patti :- 2 table spoon 
  • Badi elaichi :- 2 
  • Bay leaf:- 1

  • Laung:- 4

    ” Ingredients for special masala of amritsari chola “
  • Anar Dana :- 1-1/2 anar Dana 
  • Green elaichi:- 3 
  • Laung:- 3-4 
  • Badi elaichi :- 2
  • Black pepper seeds:- 5-6 
  • Dried dhaniya seeds:- 1 tea spoon 
  • Jeera :- 1 tea spoon
  • Red chilli powder:- 1 table spoon 
  • Turmeric powder:- 1 tea spoon 
  • Aamchur powder:- 1 table spoon
  • Jeera powder:- 1 tea spoon
  • Kasuri methi :- 1 tea spoon

  • Tomato :- 2

  • Garlic:- 1/3 cup
  • Hing :- 1/2 tea spoon

  • Ghee :- 3 table spoon 
  • Ajwain :- 1 table spoon 
  • Green chilli :- 2 
  • Degi mirch powder:- 1 tea spoon

Steps wise cooking chickpeas recipe
  • Raat bhar pani me dalkar chole ko rakhe ya phir 4-5 ghante pehle garam pani me chole ko dalkar rakhen. 
  • Ab pani se nikal kar chaan le aur fir cooker me dale. Ab pani dale usme. 
  • Aur chai Patti ko ek kapra me bandh kar cooker me dal de taki acha sa colour aa jaye. 
  • Fir isme Badi elaichi, bay leaf, cinnamon, laung , salt as per taste dal kar cooker ko band kare. 
  • Ise 5-6 whistle tak medium to high flame par rakhe fir uske bad medium to low flame par karke 2-3 whistle tak rakhe. Agar lage ki aur jarurt hai whistle ki to 1-2 whistle aur lagye. 
Step wise making of special masala of amritsari chole 
  • Flame ko medium to low ke bich me rakhenge. Ab pan rakhenge. 
  • Pan me anar Dana, green elaichi, laung, badi elaichi, black pepper , dried dhaniya seeds, jeera ko dalkar achese roast karengen. 
  • Roast hone ke bad use grinder me dale. Ab turmeric powder, jeera powder aur kasuri methi dalkar grind kare. 
  • Achese ek powder form me ready karle. 
Step wise amritsari chola recipe
  • Ek pan ko garam kare. Usme oil dale. Ab garlic ko grind karke paste banaye aur fir pan me dale.
  • Fir onion ka paste ready kare aur pan me dale. 
  • Achese fry kare low flame par. Aur ajwain dale. Fir hing, aur sliced chopped green chilli dalenge. Aur fry karenge. 
  • to tomato pury ready karke isme dale
  • Kuch 5-10 minute bad dekhenge ki pury v Pak Gaya hai . To ab usme ham 2 -3 table spoon special masala dal denge. Aur dheeme aanch par fry kare. 
  • Fir jab masala ready ho jaye to 1 cup chola cooker me se nikal kar pan me dale. Aur mix karke mash karde. 
  • Ab fir sare chole ko usme dale aur mix taki masala sab chole ke sath mix ho jaye. 
  • Fir jo cooker  
  • me chola ka pani sab hai usse pan me dalkar mix kare. Jarurt pare to extra pani aur add kare. Salt as er taste dale. Ab dhak de taki achese chola thick ho jaye. 
  • Ab dusre pan me 3 table spoon ghee dale aur fir ajwain, green chilli aur degi mirch powder dale. Fir turant he chole me dale aur mix kare. Jyada tarka ko flame par rakhna ni hai. Bas degi mirch powder last me dala aur turant he chole me dalkar mix kare. 
  • 10-15 minute bad amritsari chola ready hai. 
  • Ise serve kare upar se chopped dhaniya aur sliced chopped onion , green chilli aur lemon sath me. Fir bhatura ya kulcha sath khaye. 
Isse dinner time me khaye pure family ke sath aur enjoy kare.
