 3 different Vegetable soup 

Be it winter season or monsoon season everyone loves to drink soup. Especially when it is winter time, hot soup keeps our body warm as well as gives energy. We all like different tastes. Some have vegetable soup, tomato soup, corn soup, chicken soup, etc. There are so many different flavors or varieties of soup that people have their own demands.

If we talk about healthy soup or weight loss soup, then there are many such soups which help in weight loss as well as a good source of vitamins, protein in all. It has often been seen that people who are following the diet, they have only soup in their dinner. Soup is a complete meal so you can have it for dinner if you want. Cooking  is quite easy. Soup will be ready in 15-20 minutes. It is not necessary to add some different ingredients to make it thick. 

Today I will share with you the recipe of some such healthy soup which you will eat as your dinner also in snack time.  Yes, these soups are made from pure and fresh vegetables and the recipe is very simple. Your favorite and delicious soup will be ready in under 20 minutes.

So let’s see 3 different vegetable soups.

Minestrone soup 

Ingredients required :- 
  • Pasta:- 1 cup
  • Carrot :- 1-2 pieces chopped
  • Beans 
  • Onion 
  • Salt
  • Black pepper 
  • Tomato:- 2 
  • Lemon juice 
  • Coriander leaves
  • Basil leaves 

  • In the cooker add 2 tomatoes and cook till 3-4 wishtle. Now take out and blend and prepare the pury. Now filter the pury and keep it in another bowl.
  • Heat a pan.
  • Now put one table spoon oil in it.
  • then add chopped garlic to it
  • Add chopped onion and mix.
  • Then add chopped beans, carrots, and vegetables of your choice to lentils and saute.
  • After 5 minutes add 1 cup pury and water. Mix it. And then add one cup of half boiled pasta ,  salt as per taste, black pepper powder and stir.
  • Add chopped coriander leaves, then the juice of half a lemon and mix. Cover the pan and boil it for some minutes. 
  • Minestrone soup is prepared after 5 minutes. 
  • Add grated basil leaves and mix.
  • Serve hot.

If you want, add vegetables from the herbs of your choice. If desired, chopped capsicum can be added.

In which dishes does we should use vegetable stock?

Lemon soup 

Ingredients required:- 
  • Lemon juice 
  • Cabbage :- 1/3rd cup
  • Corns:- 1/4th cup
  • Coriander leaves 
  • Onion:- 1/3rd cup
  • Garlic :- 3-4 
  • Salt
  • Black pepper 
  • Vegetable stock 

  • Heat the paan.
  • Add one tablespoon oil.
  • Add chopped garlic, onion, cabbage, corn, coriander leaves.
  • Saute all for 3-4 minutes on low flame only.
  • Now add 1/2 cup vegetable stock and mix it, and add a cup of water.
  • Then add salt, pepper and mix it.
  • Add grated ginger, juice of half a lemon and mix.
  • Now let it boil for 5 minutes, then take it out in a bowl and serve.

Cauliflower soup 

Ingredients required:- 
  • Cauliflower :- 1 cup
  • Vegetable stock :- 1 cup
  • Water:- 1 cup
  • Salt 
  • Black pepper 
  • Lemon juice 
  • Butter 

  • Heat the pan.
  • Add chopped cauliflower .
  • Now reduce the flame to low and roast the cauliflower.
  • Roast on low flame for about 5-6 minutes. ( If it is not cooked then let it get roasted nicely). 
  • Take out roasted cauliflower in a bowl. 
  • In a pan add one table spoon of oil. 
  • Add chopped garlic in it. And then add chopped onion. 
  • Saute it for atleast 2-3 minute. 
  • Add vegetable stock and then add water , mix it well . 
  • Add  roasted cauliflower. 
  • Add salt as per taste, black pepper powder and mix well. 
  • Put 2-3 pieces of roasted cauliflower aside and then add left over roasted cauliflower in the pan. 
  • Cover the pan and let it get boiled for 5-6 minutes. 
  • Now in a blending jar add all the soup and lemon juice and one table spoon of butter. 
  • Blend it for about 10 second on medium. 
  • Now take out in a bowl . 
  • Garnish some roasted cauliflower, Basel leaves on it and then serve. 

Also if you have  broccoli and mushroom at home you can make soup with that also. 

Broccoli soup

  • First of all, roast it on the pan for about 5 minutes on low flame. 
  • Then take out in a bowl. 
  • Heat a  pan , add one table spoon of oil. 
  • Add chopped garlic, onion and saute for about 2 minutes. 
  • Now add vegetable stock and mix well. Add water as per your requirement. Add broccoli and boil it for about 10 minutes . 
  • Add salt as per taste, black pepper and lemon juice. 
  • After thi, blend it and the soup is ready. 

Mushroom soup 

There are different ways to cook mushroom soup.

The easiest one is 

  • Heat a pan.
  • Add oil.
  • Add chopped garlic, onion and saute it. 
  • With it add chopped mushroom and cook on low flame. 
  • Fry it for about 10 minutes. 
  • The colour of mushroom will get changed. 
  • Now add some coriander leaves to it. 
  • Add water as per your requirement. 
  • Add salt , black pepper , basil leaves. 
  • Let it get cooked for 5 minutes. 
  • Now garnish it with grated ginger and coriander leaves. 
  • The soup is ready .
  • Serve hot.

If you want, add curry to the vegetables according to you choice. Also if you want , add paneer to it.  If you want to make simple vegetable soup, then you sauté all the vegetables together with lentils and then add water. After few minutes your simple vegetable soup is ready.

Fresh mushroom is available during the monsoon season as well as paneer is available to us for a full 12 months. So mix them, prepare a new soup. All these soup recipes are home made and at the same time very beneficial for our body. If you want, you can have it for dinner. All these soups are like a whole meal. You can have toast with it if you want. Otherwise avoid doing it.

If you are unable to have in the meal, then try to have the soup in the snack time. At least three times a week.
